“Bringing Japanese togetherness to Hakuba” as our theme, we elevate carefully selected Japanese ingredients through globally honed sensibilities and techniques. Inspired by the chef’s travels, we present refined fusion cuisine where diverse influences are artfully woven together.

After graduating from the Culinary Department of Matsumoto Daiichi High School, he gained experience at a local multinational restaurant. He later ventured into a different field as a truck driver, but unable to give up his dream of opening a restaurant with his brother, he opened an outdoor restaurant at the age of 30. Since then, he has continued to explore the possibilities of food through operating diners and a Thai restaurant in Hakuba Village, leading to where he is today.

At the Northern Alps International Art Festival 2024, he collaborated with the world-renowned artist “Aoi Itsuki” to produce a special bento box.
